Kuurdak

In Kyrgyzstan, kuurdak is made from meat or offal browned with fat and onion, then cooked until tender. Modern home and restaurant versions often add potatoes, but they do not define the dish and are absent from some recipes.

What is kuurdak?

The name is connected with the Kyrgyz verb kuuruu, meaning to fry. The method begins over a high heat: pieces of meat are browned in fat, onion is added, then everything continues frying or is covered and stewed until tender.

Kuurdak belongs to a shared Central Asian culinary tradition. In Kyrgyzstan, it is made at home, in cafรฉs and during butchering, with the ingredients depending on the situation. A plate of potatoes and large pieces of beef and a fresh kuurdak of liver, heart and lungs can therefore share the same name.

The list of spices is usually shorter than in generic internet recipes. Salt, pepper and the flavour of the meat matter more than a mixture of paprika, basil, coriander and several sauces. Cumin and herbs are added according to family habit.

Meat, offal and potatoes

Meat kuurdak uses lamb or beef, sometimes with ribs. A fatty cut provides the base for frying. Vegetable oil or separate animal fat is added when the meat is lean.

Offal versions may combine liver, heart, kidneys and lungs. They need different cooking times: dense heart goes in first, while liver cooks more briefly to keep it from drying out. A single word on the menu does not reveal the exact contents.

Potatoes entered modern recipes and turn the dish into a complete hot meal. They are added once the meat has partly softened. If they go in at the start of a long braise, they lose their shape before a tough cut of meat is ready.

What to ask when ordering

Ask which meat the kuurdak contains and whether offal is included. For a group, it is useful to clarify the weight or number of servings, as the dish may arrive on a large shared platter.

Kuurdak is usually considerably richer than soup, while browning and the amount of potato vary. For a meat dish with noodles and separate broth, choose beshbarmak. For a clear broth with vegetables, try shorpo.

A home version for 5-6 servings. The meat is first browned well, then cooked until tender, with the potatoes added at the final stage.

Cuisine: Kyrgyz and Central Asian. Total preparation time:

Ingredients:

  • 1 kg lamb or beef
  • 700 g potatoes
  • 250 g onions
  • 80 g fat-tail fat or 4 tbsp vegetable oil
  • 200-300 ml hot water
  • 1 tsp cumin, optional
  • salt and black pepper to taste
  • herbs to serve

Method:

Step 1. Cut the meat into 3-4 cm pieces, the onions into half-rings and the potatoes into large wedges.

Step 2. Heat a kazan or heavy pan thoroughly. Melt the fat or add the oil, then brown the meat in small batches.

Step 3. Return all the meat to the pan, add the onions and cook for 5-7 minutes. Season with salt and pepper and add cumin if you wish.

Step 4. Pour in the hot water, cover and simmer over a low heat for 35-60 minutes. The exact time depends on the cut.

Step 5. Once the meat is almost tender, add the potatoes. Stir, cover and cook for another 20-25 minutes.

Step 6. Remove the lid and reduce any excess liquid if necessary. Rest the dish for 10 minutes and serve hot.
